What's your all-time favorite vacation memory?
Kale is a perfect superfood for summer. This light,
refreshing kale salad is perfect for those hot summer days.
Ingredients:
3 cups kale, stems removed
2 tablespoons slivered almonds, lightly toasted
1 tablespoon shallot, sliced thinly
2 tablespoons fresh goat cheese
1 grapefruit, peeled and cut into sections
kosher salt
black pepper
2 tablespoons lemon juice
2 tablespoons lemon zest
3 tablespoons olive oil
Preparation:
For the dressing: Combine lemon juice, lemon zest and
olive oil in a small bowl. Mix well. For the salad: Mix kale,
almonds and shallot in a large bowl. Season salad with salt
and pepper. Crumble goat cheese into small pieces and
mix into salad. Toss the salad with enough dressing to coat
leaves. Arrange grapefruit sections on top of the salad.
